Young tender ginger

This has been staple at our farm for a few years now.  We read about growing young ginger in the back of a magazine and wanted to try it.  Our first year was a success and continue to grow it.  Every part of the plant is edible including the leaves.  This young ginger barely has a skin and is not fibrous.  This is perfect for pickling because it can be sliced very thin and contains a natural zip.  Our favorite way is to have it raw.  Makes an excellent amenity to hard cider and beer.  Available from September until it frosts.
